This is the basic tomato sauce that I use most of the time. You can keep this in the refrigerator for a couple of weeks or freeze it if you want.
½ Extra Virgin Olive Oil
2 small onions, finely chopped
3 garlic cloves, finely chopped
1 (6 oz.) can tomato paste
2 (32 oz.) cans crushed tomatoes (I like the TUTTOROSSO)
Pinch of red pepper flakes
Salt and pepper to taste
½ tsp dried basil or 2 fresh basil leaves
In a large pot, heat the oil over medium heat. Add the onions and garlic and sauté a couple of minutes until the onions are soft but try not to burn the garlic if possible. Add the tomato paste and cook for about 3 minutes. Add the tomatoes and basil, salt and pepper. Simmer uncovered over low heat for until sauce thickens, about 1 hour. Delissimo!
